the Mediterranean, have much similarities in foods and culture. They
all have long and old history that may go back more than three
millenniums. It's said that the city of Damascus (capital of Syria)
is probably the longest continuously inhabited city in the world.
We are talking about a region, with all these countries, that has seen one
major power and culture after another that dominated that part of the
world ever before biblical times.
From the Greek and Roman empires to the Phoenicians, Assyrians, Hittites,
Persians, Arabs,
Ottomans, Crusaders and the modern Europeans, have all influenced these
cultures.
During this long history, these cultures have evolved an extensive
culinary art and practice. The usage of earth's resources, such as grains,
fruits and vegetables, is very extensive. many of the agricultural
products are naturally grown without the use of commercial additives to
the soil.
This book, beside providing many wonderful recipes, presents a modest
amount of information about the Geography, History, Government, social and
economic synopsis. We hope that this information can be of value to
